Mango Bread and Butter Pudding and Round-Up : Mango Moods

OK People ! Thanks a ton for being ever so patient while I was roudning -up all the gorgeous and lip-smacking  that were sent by you all to make Mango Moods a super duper success. We have 28 entries from 17 blogs and they are all just mind-blowing. So without much further delay here's presenting the Grand Mosaic of Mango Moods

And now for my entry to the event. This must be the quickest pud I have ever made. And surprise surprise it turned out great. But recipe will be posted tomorrow. Promise!!  So keep watching this space.

Coconut Strawberry Cupcakes

Small Strawberry and Coconut Cakes

A  very BIG  HELLO to all of you after almost  a million years. Yes that's what it feels like to me today. Last post I put up was in October last year and after that I have kind of gone into a winter sleep where blogging is concerned. But that's only where blogging is concerned. A lots happened since then. The first break happened because my parents were here to visit us and ofcourse with them here obviously blogging was the last thing I could find time to do. They had a great stay and we did the touristy trips with them all over UK.


After they left I got a job. YES A JOB!!!! Isn't that great?  I now work in a Primary School as a Learning Support Assistant and I am happy with  my job. That's the second reason why I am not actively blogging. I am ofcourse cooking and entertaining but I now cook mostly in the evenings and my food pics taken in the evening are horrible. I have to also admit that many a times the food is eaten and polished off before I can photograph it. So no blog posts!


Then in Dec I went on my annual trip to India for 5 weeks. I spent the most fabulous 5 weeks there eating everything that I had missed in the last one and half year. It was  simply great being back in Pune and riding my Honda Activa and driving the Santro.  We had a blast and my son loved it. In his words "Aai INDIA ROCKS". What else did I need to hear.


But now I have been back since one month and things have fallen back into a routine with school and office and other activities and I am definitely back on the blogosphere.


A week back I baked these little cakes from a recipe from one of my most used books and that is The Pleasures of Vegetarian Cooking by Tarla Dalal.  Now in the book these cakes are called Madeleines, but I prefer to call them just "little cakes" as traditionally a Madeleine is a  shell shaped cake eaten at tea time and which is baked in special shell shaped moulds, so for me these are just small cakes or cup cakes which have a delicious coating of strawberry jam and dessicated coconut. These cakes come out beautifully each and every time and no matter how many I make they are never enough.


Note: These cakes need to be ideally baked in individual cup cake moulds, but I do not have those and baked them in a muffin tray which worked just fine


I have followed the recipe from the book word to word, and here it is for you.


Ingredients:
  • 115 gms sugar
  • 115 gms butter
  • 2 medium eggs
  • 115 gms self-raising flour
  • 1/2 tspn lemon or vanilla essence (I used vanilla)
  • 1/2 tea cup milk approx
  • red jam (I used strawberry jam)
  • dessicated coconut
Method:
  • Sieve the flour
  • Cream the butter and sugar very well  until light and creamy
  • Beat the eggs well
  • Add a little of the egg mixture to the butter and sugar and beat well. Gradually go on adding eggs beating well  all the time. If the mixture curdles, add a little flour ,mix well and then continue adding the eggs.
  • Add the sieved flour and enough milk till the batter has a dropping consistency.
  • Add the essence.
  • Grease and dust your muffin tray or the cake moulds and fill upto 3/4 with the cake mixture.
  • Bake at 400 deg F for around 20 mins.
  • Cool the cakes
  • Warm the jam and brush the cakes  with the melted jam.
  • Roll the cakes in dessicated  coconut.


The cakes are now ready to eat. Try these they are simple to make and taste awesome

Lunch Box Idea No 4


Hallo everyone,

I have taken quite a big break between Idea No 3 and Idea No 4 . But here it is for you.

This box contains :
Carrot ,spring onion and coriander parathas,
Homemade Apple Muffin,
Apple Juice and of course Water.

Sorry I took so long to post the recipes . Yesterday was a busy day with unexpected guests coming over in the evening and you know what. After the guests left I did remember about the unposted recipes but was too tired to type. But today morning while eating the same parathas that were leftover I knew I had to complete my post as soon as possible. So here they are.

The parathas are the simplest ones ever.

You need :

1.5 C Whole wheat flour, 2 green onions finely chopped, 1 carrot grated, a handful of fresh coriander finely chopped, 1 heaped tspn coriander powder, 1 heaped tspn cumin powder, 1 heaped tspn saunf powder, 1.5 tspn chilli powder, 1 tspn sugar, 1 tblspn oil, salt to taste

Method: Mix all the ingredients, and knead into a dough not too soft not too firm. At the last stage oil your palm and knead the dough until nice and smooth .

Roll out thick parathas and roast on both sides. A few minutes before you want to pack these spray a tiny amount of oil on to the skillet and warm the parathas on both sides spraying oil on the other side of the paratha too.

I spread some hummus on one paratha, ketchup on the second one and sprinkled dry chutney on the third one before rolling them up.

Now for the apple muffins. I tried these for the first time but they turned out well.

I used:

1 heaped tblspn butter, 1/2 C sugar (use brown sugar preferably, it's delicious), 1.5 C plain flour, 1.5 tspn baking powder, 1/2 tspn salt, 1 egg, 1/2 tspn vanilla essence, 2/3 C milk, 1 cup pureed raw apple, 1/2 tspn cinnamon, 1/2 tspn nutmeg

Mix all the wet ingredients in one bowl along with the sugar (the butter , egg, milk and apple puree) . In another bowl sift together the flour , baking powder, and the spices . Next add the dry ingredients to the wet ones and fold gradually. Don't over mix or the muffins will turn out dry. It's OK if you have a lumpy batter.

Spray oil on a muffin tray and spoon the batter into it. Bake at 230 deg C for 12 mins

Spicy Christmassy Carrot Muffins

Hey people!! I am really getting into the Christmas mood. After the Brownies here's my next christmassy creation.

Here's how it goes:

225gms self-raising flour, 2tspn baking powder, 150 gms muscovado sugar, 50 gms walnuts, 100gms carrots grated, 2 eggs, 1tsp cinnammon powder, 1/2 tspn clove powder,150ml sunflower oil

Preheat the oven to 180degC and place paper cups in a muffin tray,alternatively if you do not have paper cups just grease and dust the muffin tray.

Procedure:

Sift the flour and baking powder twice . Beat the eggs . Then mix all the ingredients in a large bowl . The mixture should look lumpy. Spoon the mixture into the prepared muffin tray. Fill each muffin mould upto 2/3rds. Bake for 15 to 20 mins.

Let cool a little and then unmould the muffins by just inverting the tray and gently tapping on it. Dust with icing sugar.

Mini Cappucino Muffins

The classic English (or for that matter German) Combination of Coffee and Cake (oder Kaffee und Kuchen) is something I just love. Though both of them are not the healthiest of foods they do bring great comfort to the soul. So when I read this recipe of coffee muffins which meant a combination of my two favourite foods I knew I just had to make them. And make them immediately. Fortunately the recipe did not require any unusual ingredients and I could get started immediately. I must admit that few weeks back I had read 2 good muffin recipes on Shammi's Food ..in the main which were quite an inspiration too. And I must say the result was stupendous. So here goes....

Ingredients:
250 gms self-raising flour, scant 1/2 tspn baking powder, scant 1/2 tspn salt, 1.5 tblspn instant coffee powder (dissolved in a little warm water) , 150 gms fine brown sugar (simple powdered white sugar is fine too), 2 large eggs, 125 ml milk, 125ml sunflower oil.

Procedure:

1. Sift flour and baking powder together at least twice.

2. Add to that the coffee solution

3. In another bowl whisk eggs ,milk and oil together. Fold this mixture into the flour mixture.The batter should still be lumpy.

4.Spoon into a greased muffin tray or individual muffin cups filling each to two-thirds full. Bake in a pre-heated oven at 200 deg C (400deg F, gas mark 6) for about 15 to 20 mins or until golden brown. Turn out onto a wire rack to cool. This recipe made 24 mini muffins.

I thought of taking them to the park in the evening to share with my friends but then felt too greedy to share them. But I'll definitely share the next batch.
