Yummy Biscuit Rolls

These rolls were made by my mother during her stay with me. She makes them very often back home, but I had wanted a demo. So she made them specially for me. It took her about a couple of hours to make them but they were all finished in 15 to 20 mins. No , I was not the only one to eat them. Though I admit I ate quite a lot of them. They are great for children's parties, and also as a light dessert after a heavy meal.

Ingredients:

20 Rich Tea Biscuits or 200 gm pack of Marie Biscuits (biscuits to be crushed into a fine powder), 2 tblspns soft unsalted Butter(homemade white butter if available), 2-3 tblspns powdered sugar, 4 tblspns dessicated coconut, 2-3 tblspns milk, 3 heaped tblspns drinking chocolate.

Mix the drinking chocolate and the crushed biscuits, slowly add the milk and make dough. Dough should not be too soft or too firm.Divide the dough into 3 parts as shown below.

In a separate bowl mix the butter, sugar and dessicated coconut .(Use melted butter if you prefer) Make 3 portions of the this stuffing just like the dough

Roll out the dough over a greased plastic sheet and spread the coconut filling over it.

With the help of the plastic sheet make rolls of the dough with the stuufing inside. You now need to thoroughly chill these rolls in the refrigerator for at least 2 hours. After 2-3 hours cut the rolls like swiss rolls . And they are ready to eat.
