Its Crustless Coconut Tart.

Crustless Coconut Pudding

Well People ! Thanx for playing along. For a relatively new blogger like me the apprehensive bit was that no one would turn up on my blog and there would be no guesses. Besides as my dear friend Vaishali pointed out, this photo was also posted by me on Flickr with its title to be viewed all. But thanx to Vaishali I corrected that just in time though I admit I kicked myself for such a stupid mistake.

Well now turning to the dish in question I guess the coconuts were a sure shot giveaway. And I do like all the guesses you guys have made and some of them are almost correct. Well the book from which I followed the recipe calls this dessert Crustless Coconut Tart. I was really intrigued by the name because I have never eaten any kinds of tarts (crust or no-crust) and secondly the picture in the book looked divine and yet the recipe was the simplest one I have ever followed. The top does look like that of a Creme Brulee doesn't it? But its just crispy browned coconut
Here's how I made it:

Ingredients:
85 gms plain flour
450 ml milk
150 gms caster sugar
60 gms dessicated coconut
50 gms butter or margarine melted
3 large eggs
1 tspn vanilla essence
1/2 tspn baking powder
pinch of salt

1. Sift flour and baking powder and add all remaining ingredients. Mix well. Spoon into a greased pie plate. Bake in a oven at 180 deg C for 50mins until light brown and leave it to cool. After it cools chill in the refrigerator for a couple of hours andits ready to eat. Thats it. Wasn't that simple?

The scone recipes I've seen / tried had loads of butter - Yours seems by far the healthiest
